Bia Sicilian Artisan Fresh Pasta

BIA Sicilian Artisan Fresh Pasta is produced in Resuttano (CL), an uncontaminated agricultural center in the Sicilian hinterland, and is made using the finest varieties of Sicilian durum wheat grown and milled a few kilometers from the factory.

From Field to Table

The semolina used, equipped with UNI EN ISO 22005 “From Field to Table” Chain Certification, guarantees the authenticity of the selected Sicilian grains and the identification of the production site, as well as the transparency and control of all stages of the production process, from field to table, for a healthy, safe and genuine final 1 product. The production, all characterized by rough bronze drawing, ranges from long formats to short ones, to special formats.

We also produce pasta from controlled and certified organic agriculture pursuant to EC Regulation 834/2007, as well as whole wheat semolina pasta, which is lighter and more digestible.

This process gives the pasta a rough surface that holds sauces better.

Single pasteurization

A heat treatment that is applied only to the freshly formed product (single pasteurization process), and not also to the already packaged product (double pasteurization, typical of almost all "industrial" fresh pasta found in large-scale retail).

Intense flavour

Thanks to the 100% grains used and the innovative processing methods, Bia artisan pasta has an authentic and unmistakable flavor.

Digestibility

The presence of fiber and the artisanal processing make this pasta more digestible than industrial pasta

Sicilian Ancient Grains

At the heart of Bia artisan pasta we find ancient grains, a true genetic heritage that connects us to the traditions of our ancestors. These local varieties, selected and perfected over the centuries, have withstood time and trends, offering us today a healthy, tasty and history-rich food. Each ancient grain, with its unique characteristics, gives the pasta an authentic and unmistakable flavor, capable of evoking memories and deep sensations.

Unlike modern grains, ancient grains are richer in fiber, protein and micronutrients and have a lower glycemic index. These characteristics make them particularly suitable for a healthy and balanced diet, promoting digestion and providing a more lasting sense of satiety.

Tumminia

Known for its dark color and intense flavor, tumminia is rich in fiber and protein. The pasta produced with this grain has an unmistakable aroma and a rough texture that pairs well with hearty sauces.

Perciasacchi

This ancient grain is distinguished by its elongated shape and its ability to withstand drought. The pasta made from it is highly digestible and has a delicate flavor.

Russello

Characterized by small and round grains, russello gives the pasta an amber color and a slightly sweet flavor. It is ideal for light and delicate first courses

Senatore Cappelli

Originally from Puglia but also grown in Sicily, Senatore Cappelli is a very versatile grain. The pasta produced with this grain is yellow, porous and has an intense flavor.

Sicilian Busiate

Fresh Sicilian Busiate, made with durum wheat semolina or whole wheat semolina, are the flagship product of the BIA pasta factory. Robust and tenacious, they have excellent cooking resistance and retain sauces perfectly, both due to their rough bronze drawing and their particular twisted shape that traps them inside.
